Today, food technology is developing rapidly. It will soon provide us with meat substitutes that are good in quality and not so expensive. Food tech has the potential to change what we eat in our daily lives.

Meat substitutes may sound strange to us at first, but the Japanese have had shojin ryori for hundreds of years. A variety of plant-based meat substitutes are served in the cuisine. In the coming years, healthy and eco-friendly foods such as meat substitutes may improve our lives and save our planet.
