Over 5,000 species of mushrooms grow in Japan. Among them, roughly 2,000 species have names, and about 200 species are edible. Many forest animals like eating mushrooms, and we do, too.
Actually, mushrooms have a long history in our daily diet. Shiitake cultivation started in the 17th century. Before then, people had eaten mushrooms for thousands of years.
In fact, mushrooms are among the so-called superfoods. They are rich in vitamins and minerals and are low in calories. They also contain a lot of fiber and some protein. Eating mushrooms can keep us strong and healthy.
